Chef Paolo Dalla Torre was born in 1982 in Motta di Livenza, a small town in the province of Treviso.

He graduated at the Hotel School IAL in Aviano and then continues his training in some of the most important restaurants on national level, like Villa del Quar in Pedemonte in the province of Verona, the Hotel Danieli in Venice, the Tavern at Amelia in Mestre, the Restaurant Re Teodorico in Verona, the Inn at Piero in Vicenza, the Hotel Miramonti in Cortina d’Ampezzo and the Restaurant Perbellini on the Isle Rizza.

The passion for cooking led him to Paris to the Training School of Alain Ducasse, where he will refine the technique and skill applied to taste and aesthetics of the dishes.

Nowadays Paolo Dalla Torre is chef of the Restaurant Pedrocchino in Sacile. Here he proposes a carefully thoughtful and proven cuisine, with fish dishes that keep Venetian tradition, interpreted according to the standards of actuality and with some interesting openings to the great international cuisine.
