Nests of paccheri with curled octopus sauce and truffle flakes

Ingredients contained in the packaging:

Half paccheri “600.27” Carla Latini 500 g. (of which 320 g. for the preparation)
Curled octopus sauce 300 g.
Truffle flakes 45 g.


Additional ingredients to be required:

• butter (knob
• extra virgin oil as needed
• chopped parsley
• 1 lemon
• Date tomatoes (about 15)
• Parmesan Cheese as needed
• tinfoil


Preparation for 4 people

Heat the oven to 180°.
Cut the tomatoes half, put them on a baking-tin and season them with a pinch of salt and sugar, a dribble of oil and some grated lemon peel; put in the oven and bake for about 10 minutes at 180°.
Blanch the paccheri in abundant boiling salted water for about 10 minutes, drain them, season them with a dribble of extra-virgin olive oil and let them cool. Divide the paccheri into four portions.
Create a "nest" for each portion with tinfoil.
Brush the nests with a knob of butter.
Stuff the paccheri by means of a teaspoon with the curled octopus sauce, previously heated, and fill the "nests".
Sprinkle the paccheri with a drop of oil, parmesan, and other sauce, place the "nests" on a baking-tin and put in the oven.
Bake at 180° for about 10 minutes till getting au gratin.

Take out of the oven, place the nests on a dish and sprinkle the paccheri with truffle flakes, tomatoes and parsley.
